Yesterday, my favorite barista at the local Starbucks said she was going to spend the weekend at home making comfort foods. I know how she feels - when the colder weather arrives, we all start turning to our favorite comfort dishes. Soy Sauce Chicken With Shiitake Mushrooms is a great choice. Chicken thighs are marinated in a flavorful mixture that includes both regular and dark soy sauce, Chinese rice wine (substitute dry sherry if needed) and brown sugar, and then cooked in a pan with the onion and dried shiitake mushrooms.
