1. If you are using fresh water chestnuts, peel and rinse them. If you are using canned whole water chestnuts, rinse in warm running water and drain to remove any tinny taste.
2. Soak the water chestnuts in the soy sauce for 2 1/2 hours.
3. Remove the water chestnuts from the soy sauce.
Discard the liquid.
