This garlic chicken recipe is perfect for busy weeknights â€" marinated chicken cubes are paired with fresh garlic and vegetables in an easy stir-fry.
Cut the chicken into bite-sized cubes. Place in a bowl, mix in the marinade ingredients and let stand while preparing the other ingredients.
Prepare the onion, carrot, garlic and green onions. In a small bowl, combine the Asian sesame oil, light soy sauce, sherry and chili paste for the sauce and set aside.
Heat wok and add 1 1/2 - 2 tablespoons oil. When oil is ready, add the marinated chicken. Stir-fry briefly on high heat until the chicken turns white and is nearly cooked. Remove the chicken and drain in a colander or on paper towels. Wipe out the wok.
Heat 1 tablespoon oil in the wok. Add the garlic and green onion. Stir briefly until the garlic is aromatic, then add the onion and carrot. Stir-fry for about 2 minutes, adding a bit of dry sherry, water or chicken broth if the vegetables begin to dry out. Add the sauce and add the chicken back into the pan. Stir to combine and cook the chicken through. Serve hot over rice or noodles.
