The Chinese greens in this recipe are bok choy, the most popular vegetable in Chinese cooking. Like other leafy green vegetables (such as spinach) bok choy is nutrient-dense, supplying more vitamins and minerals than other foods with a similar calorie count. Serve Shrimp with spicy Chinese greens over cooked rice for a complete meal.
