Nutrient dense and high in protein, eggs play an important role in many diets. Scrambled, hard boiled, or steamed, here are a number of Chinese egg recipes, along with Egg Foo Yung, a classic comfort dish.

1. Tea Eggs

This savory snack is sold by street vendors throughout China and Taiwan. Hard boiled eggs are gently tapped all over so that cracks appear, then simmered in an aromatic mixture of black tea and spices. Once the shell is removed, the eggs have a beautiful marbled pattern. Tea eggs make a great snack (they’re low in carbs and calories), and can be served with a salad and other cold dishes to make up a meal.

2. Steamed Pork in Egg Custard

This recipe comes from HeartSmart Chinese cooking (one in a series of cookbooks published by the Heart and Stroke Foundation of Canada). In his introduction to the recipe, author Stephen Wong writes: “Instead of custard, the Chinese call this country dish "a meat cake" and steam it over the cooking rice to conserve energy. To further reduce fat, replace whole eggs with 4 egg whites.” The recipe includes a nutritional breakdown.

3. Chinese Scrambled Eggs With Garlic Chives

This recipe for Chinese scrambled eggs is made with Chinese garlic chives, known for their “garlicky” flavor. Chinese garlic chives pair nicely with egg, but you can use regular chives if desired. This dish typically calls for a large quantity of chives - feel free to reduce the amount to 2 or 3 tablespoons and add other seasonings if desired.

4. Scrambled Eggs With Shrimp

Here’s another idea if you’re looking for a way to jazz up scrambled eggs. Chinese seasonings such as oyster sauce and rice wine (you can substitute dry sherry) add something extra to this basic scrambled eggs recipe. To further enhance the recipe, try marinating the shrimp before cooking.

5. Chop Suey With Quail Eggs

Speckled and smaller than hen’s eggs, quail eggs also contain a higher percentage of protein, Vitamin A and certain B vitamins. In this recipe, the eggs are paired with pork, shrimp and vegetables to make a classic comfort dish.

6. Egg Foo Yung

Although Egg Foo Yung tastes great on its own, it’s frequently accompanied with a brown sauce or gravy. (The brown sauce used in Beef With Broccoli works perfectly).
