This is the popular green bean dish that is frequently served at Chinese restaurant buffets. It's easy to make your own Chinese green beans at home. The secret is a Szechuan cooking technique known as "dry frying" - frying the beans for about 5 to 7 minutes, until the skin "puckers" and turns brown. This makes the green beans more tender and less crunchy. In this recipe the green beans are cooked with ginger, garlic and chili paste, and tossed with a flavorful bean sauce before serving.
